Cherry Cobbler


Cherries are in season right now, and cherry cobbler is excellent dessert to showcase their flavor. It can be a pain to pit all of the cherries, but it’s certainly worth it. Serve plain or a la mode.


  • 4-5 cups pitted cherries
  • 1 teaspoon vanilla extract
  • 1 tablespoon butter
  • 1/2 cup sugar



  • 2 cups flour
  • 1 tablespoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup sugar
  • 1 1/2 cups soy milk
  • 1/3 cup vegetable oil
  1. Combine all fruit ingredients in a saucepan and stir over medium heat until sugar is dissolved; remove from heat and set aside.
  2. Combine dry batter ingredients; add wet ingredients and whisk until mixture resembles cake batter.
  3. Place cherries in the bottom of a greased 9″ x 9″ pan. Pour batter over the top.
  4. Bake at 325 degrees for 50-60 minutes or until batter is firm to the touch and a toothpick inserted comes out clean.
